Story

John Sleeman & Sons’ Spring Mill Distillery was built by the Sleeman family in 1836 in St. David’s, Ontario, to rebuild the community after it had been burned to the ground.

Spring Mill began with a vision to embrace traditional distilling techniques. Our handcrafted copper stills and in-house cooperage apprentice help us bring the spirit of time-tested distillation to new and experienced tasters.

Built on a foundation of family values that date back to pre-confederation, it is our enduring spirit to deliver the highest quality premium Canadian spirits. We use time-tested technology that keeps the spirit of traditional distillation alive.

Activities & Events

Honouring the history of local hospitality, we offer a comfortable space with historical touches where you can gather with friends for a genuinely good time with great spirits and wonderful local food. Cozy up by our fireplace! Our carefully crafted menu captures the flavours of the season, offering fresh, local options put together specially to complement our spirits. From classics to signature cocktails, we have options for every taste. Historically, the original Allan’s Mill was close to a tavern called the Dellemere. It operated in the 1830s, hosting locals and serving the working folk of the community. We’re honouring this history of hospitality by naming our signature cocktail The Dellemere.

Nestled in Guelph’s historic Ward District, our versatile on-site private event space features window views of the Speed River, a custom-built bar, fireplace, intimate lighting, audio-visual, food options, and more!
