When we set out to create our very own Micro-Distillery, the first question everyone would ask is “What are you going to make”. Gin, Vodka, Rum, Whisky, Brandy? The answer was always yes….we want to make all of them!
What we really meant to say was we didn’t want to define our distillery by one type of spirit. We love playing with different flavours – exploring new tastes and using a wide selection of botanicals. Botanicals include everything from a plant – the roots, the leaves, the stems, the seeds, the flowers, and the fruit.
Perfect. That’s what we want. Botanical Spirits. Imagine gin steeped with ginger or ginseng, macerate fresh strawberries, add pink peppercorns to a fermentation, vapour infuse peaches, and so on.
The possibilities are endless.
Our Distillery
The Distillery includes a Tasting Room, Cocktail Lounge, classroom area, and production areas.
In our tasting room, you are able to sample all of our spirits with the assistance of our knowledgeable mixologists who will educate you on each spirit. Our multi- level cocktail lounge is a comfortable space to sit back and enjoy a cocktail with friends and family. The upper level is where our cocktail classes, group tastings, and competitions take place. Also, perfect for your next corporate event.
Our Still
We have a hybrid 1,100 Litre Pot Still with a 4-plate rectifying column and dephlegmator, a gin basket, and condensing column. This is paired with a 1,100 litre Mash Tun and two 1,300 litre fermentation tanks, and a variety of mixing and steeping tanks. With this setup we can produce a very wide range of spirits.

This 75 minute class walks you through the making of 3 different cocktails that use various methods and ingredients.
People should expect to learn basic ratios when making a cocktail, the equipment and methods used, and various flavours.
We highlight the use of Bitters – a key ingredient in elevating cocktails, as well as some of own spirits produced onsite at the distillery.
Each cocktail contains 1 1/2 ounces of spirit so participants are encouraged to plan for this when making driving arrangements.
This is held in our Upstairs mezzanine overlooking the tasting bar, which is NOT handicap accessible.
You should expect an educational but fun and interactive session.
$45 + tax per person.
We have selected 3 rums – each with a distinct style (Venezuelan, Jamaican, Canadian) and paired each with locally crafted artisan chocolates.
This 75 minute tasting reviews the difference between styles of Rum, discussing production methods used and tasting notes on each Rum. Participants nose and taste each rum and then marry this with various flavours of Chocolate to elevate the experience into an amazing sensory experience that highlights the attributes of each Rum.
Each serving is 1 1/2 ounces of Rum, so if you plan on indulging, be aware of this when making your plans on attending.
Our attendees have found this to be a educational experience for both the novice and knowledgeable Rum drinker.

Want to create your very own, personalized gifts?
This workshop is a 2-part class.
In our first class – you should expect to be here for 2 hours – each person creates their very own Bitters using our various Botanicals. We assist you in the selection and preparation of this, and then this needs to steep for 8 weeks.
In our second session, you return to strain / filter your bitters, create your very own personalized label, then bottle it.
We supply all the ingredients including high-proof alcohol and all your botanicals, bottles and labels.
Each person takes home 10 bottles of their own bitters.
We will be using our production area for this, so you will need non-slip shoes and clothes that may possibly get stained!
$100 + tax per person includes all material and packaging. Call the Distillery to arrange a date for any group of 4 or more.
Private events at Manns Distillery are held in the top-tier of our cocktail lounge that boasts ample room for your guests to mingle, with cocktail tables, comfortable sofa and lounge seating, all overlooking our 1,100 litre still and production facility.
Our casual and warm event space comfortably accommodates up to 50 guests and offers bar service and delectable tapas offerings.
